Cheesy Mushrooms Toast

When I was a kid I did not like mushrooms but the nutritious value of them has changed my mind.
Mushrooms are full of Vitamin B, Vitamin D, and contain protein and fibre.
Not many people know the trick but I tend to leave my mushrooms out in sunlight.
The reason is mushrooms transform UV light into vitamin D. Yes, that is correct!
Make sure you eat enough mushrooms to get your Vitamin D, and you won't need to buy any supplements! 😉
I tend to load my body with a nutritious breakfast like this to keep me going until lunch.
Ingredients:
🔸️Slice of GF bread,
🔸️Melted grilled dairy-free cheese
🔸️Sauteed spinach
🔸️Cooked mushrooms
Method:
Get a slice of your favourite bread, and placed the grated cheese on top. Leave the bread on the grill for 3-4minutes before your add the toppings.
Sauteed Spinach
🔸️1 cup spinach
🔸️1 tbsp. olive oil
🔸️2 cloves of garlic, minced
Method:
Heat 2 tbsp. olive oil in a large skillet on medium-high heat. Add the garlic and sauté for about 1 minute, until the garlic is just beginning to brown. Add the washed spinach to the pan.
Use two spatulas to lift the spinach and turn it over in the pan. Do this a couple of times. Cover the pan and cook for 1 minute. Uncover and turn the spinach over again. Cover the pan and cook for an additional minute. Best serve immediately.
🔸️TIP: Don't forget to add greens to each meal😉
