NUTRIVICIOUS PUMPKIN SOUP

I am a big fan of pumpkin season. I tend to use pumpkin at least twice per week during the autumn, and winter sometimes.
Pumpkin is full of vitamins and minerals! It can boost our immune system, especially now, during the cold season.
It can also lower the risk of cancer, and improve your eyesight.
Do not forget to add this orange beauty to your diet! 😉
INGREDIENTS:
🔸️2 small pumpkin
🔸️4 parsnips
🔸️2 white photos
🔸️2 big carrots
🔸️3 small sweet potatoes
🔸️1 Lt vegetable bullion
🔸️1 tsp grated ginger
🔸️1 tsp grated turmeric
🔸️ 1 red onion
🔸️ 3 cloves of garlic
🔸️2 Bay leave
🔸️1 Bunch fresh herbs 🌿
🔸️ Italian herbs
🔸️ Pinch of salt and pepper
🔸️1/2tsp paprika
🔸️1 tsp coconut cream for serving
🔸️ 1 tbsp avocado oil
Method:
I cooked my soup in the instant pot as I didn't have much time.
Heat up your instant pot. Add chopped onion, dried herbs. Sauté for 3 minutes.
Add chopped pumpkin, carrots, potatoes, ginger, and turmeric. Sauté for another 3 minutes.
Slowly add vegetable bullion, and add extra water if desired. I added another 1/2lt of water.
I switched on the soup mode and cooked it on high pressure for 12 minutes.
Once it cooked, I let the soup cooled down a bit.
Use a hand blender or any other blender
to pure the soup.
Serve your soup with coconut cream.
