SIMPLE CHOCOLATE COOKIES




What type of cookies do you love? My answer is simple cookies. Less fuss and less time in the kitchen. Like all kids, Angelina gets attracted by the cookies in the store but I pulled her out from that aisle straight away. I know for the fact that these cookies are full of nasty ingredients and high fructose syrup. And, why on earth do these companies heavily promote unhealthy biscuits to kids. Kids need to grow and develop their brains, and this food impacts their development a big time. But, now every time we visit a supermarket, Angelina turns around to me and saying: "Mummy these cookies are unhealthy and bad for our bodies". So we baked with Angelina these cookies the other day and they turned out very yummy and crunchy. 😋

Ingredients:

🔸️100g GF oats

🔸️50g coconut flour

🔸️1 chia egg

🔸️100ml coconut milk

🔸️3 tbsp hazelnut butter

🔸️1tsp cinnamon

🔸️1 tsp baking powder

🔸️Pinch of Himalayan salt

🔸️Vegan dark chocolate chips


Method:

Preheat the oven to 180C or 350F.

In the bowl mix the chia egg with coconut milk.

In the other bowl mix all dry ingredients.

Next mix dry ingredients with wet ingredients.

Continue to mix for about 20 seconds, until a dough forms.





Using a spatula, scrape down the sides and bottom of the bowl in between mixing to assure all of the ingredients are combined. If the dough appears dry and crumbly, try allowing it to mix for longer. If it’s still crumbly, try adding a tablespoon of coconut milk.


Using a scooper or a spoon (I like to use a spoon), scoop out about 1 and ½ tablespoons of dough at a time.

Arrange them on the baking sheet with about 1.5 - 2 inches in between each.




Add chocolate chips and bake in the oven for 10-12 minutes. Allow them to cool for at least 10-12 minutes before serving.
