SPINACH BREAD

If you know me well, or you might be following me on social media, then you know that I love spinach and any other greens.


Spinach has so many health benefits and ideally, we must consume it daily.


The spinach contains 250 milligrams of calcium per cup & this would help keep your bones healthy including your teeth. Also, in order to get the best out of spinach, do not forget to combine vitamin C-rich foods along with this such as citrus fruit to increase your absorption of calcium!


As well as baking your own bread is so good for our mental health!

It's so satisfying and that is why I bake my own bread and encourage you to do it the same. 😉

Bread, healthy bread, spinach bread, gluten free bread

Ingredients:

🔸️3 cups of raw spinach

🔸️2 cups GF buckwheat flour

🔸️3 eggs or chia eggs

🔸️1 tsp baking powder

🔸️1/4 cup unsweetened coconut milk

🔸️1 tbsp lemon

🔸️2 tbsp water

🔸️ Himalayan salt

🔸️1 tbsp extra virgin olive oil

🔸️1 tsp black sesame seeds



Method:

Wash spinach well, and then pat dry with a kitchen roll.

Heat up the pan, add olive oil, and then slowly add spinach. Make sure you cover the pan with a lid. Leave it covered and cook it for 2-3 minutes, and occasionally stir.

Once it is ready and put the spinach aside to cool down.


In a bowl crack the eggs or stir the chia egg, then add milk and lemon juice, and slowly add spinach. Whisk it until fully combined mixture.


In a separate bowl mix buckwheat flour, baking soda, and salt.


Slowly mix wet and dry ingredients well together.


Put the dough into an olive/coconut oil sprayed baking bread loaf pan.


Sprinkle the black sesame seeds on it.


Bake in a preheated oven for 25-30 minutes at 180 - 200°C or till golden from the top.

Remove from the oven. Brush the top of the bread with coconut butter to give a good glaze.


Unmould the bread gently on a wire mesh. And, cover with a damp cloth and let it cool for 1-2 hours.
