The Courgette Pizza Boats

If you have not tried the courgette/zucchini boats, then I have listed the reasons below why you should try them now:


  1. Easy for digestion

  2. A great alternative to a takeaway pizza

  3. You can eat more bites for a natural weight loss.

Courgettes / Zucchinis are super nutritious veg, and full of Vitamin C which is great for boosting your immune system.


How many takeaway pizzas could boost your immune system? Not many, and hardly at all!


During the cold season, we should eat more veggies to supply our bodies with natural minerals and vitamins. And this is a simple recipe that soon will become your favourite.


Ingredients:


🔸️4-5 large courgettes/zucchinis.

🔸️1-2 tbsp. olive oil.

🔸️2 cups spinach.

🔸️1 cup parsley.

🔸️2 cups cherry tomatoes.

🔸️1/2 cup tomato puree.

🔸️1 tbsp. dried Italian mixed herbs.

🔸️1 cup grated cheese of your choice.

🔸️1 pinch black pepper.


Method:


Halve the courgettes lengthways.

Place the courgette halves on a roasting tray, brush with the olive oil, and bake for 12-14 minutes, until soft.


Meanwhile, prepare your toppings ingredients for pizza.


By now all your courgettes boats are ready. Let them cool down for 2-3 minutes.


Spread the tomato puree in an even layer on ready pizza boats and add the grated cheese.

Get a medium-size bowl, place spinach, tomatoes, parsley, Italian herbs, black pepper, and 1 tbsp. of olive oil. Mix all the ingredients well. Divide the toppings between the roasted courgettes and top with extra cheese if desired.

Preheat your grill to the highest setting. Place your pizza boats under the grill for 3-4, until soft.

The best to be served warm and not to be reheated.
