SAVOURY MUFFINS

After a recipe testing all week I finally developed a yummy muffin recipe without egg or milk.

I am sure you will love it as much as I do.


It's a savoury deliciousness and super easy to bake.



Savoury Muffins


Ingredients:

🔸️1/2 cup rice flour

🔸️1/2 cup buckwheat flour

🔸️1/2 cup chickpea flour

🔸️1 tbsp tapioca flour

🔸️1 tbsp Italian herbs

🔸️Pinch of Himalayan salt

🔸️7 sundried tomatoes

🔸️1/2 cup grated courgette

🔸️1/2 cheese

🔸️2 tbsp avocado oil

🔸️1 cup water + 2 tbsp water

🔸️ Avocado oil spray


Method:

Preheat the oven to 200°C.

In the meantime , prepare the muffins mould and spray with avocado oil.

Mix four flours together with salt and herbs.

Then, add chopped sundried tomatoes, courgettes and cheese. Mix it all well.

Add water, avocado oil and mix it until well combined.


Bake the muffins for 20mins at 180°C

Tip:

I like to soak sundried tomatoes in the lukewarm water for 5 minutes prior use.
