Fluffy Protein Pancakes

If you know me well, you know that I love my pancakes 😆.
But to make them more nutritious, I tend to add real food protein, which makes them a perfect post-workout meal.
I would like to share with you my old favourite grandmother's pancake recipe.
I have made a few changes to her recipe but it still tastes delicious as hers. 😉
And now, grab a pen and paper, and write down my recipe, because I promise you will enjoy it as much as we do. And did I tell you that this recipe kid approved too?
Yes, my toddler loves to eat them with yogurt or without.
Ingredients:
🔸️1 mashed banana
🔸️150g of cottage cheese or dairy-free cream cheese
🔸️1½ cup of oat flour
🔸️2 tsp of baking powder
🔸️2 eggs or 2 tbsp. of chia egg.
🔸️Drop of vanilla extract.
🔸️1 tbsp. raisins.
🔸️1 tbsp. of coconut oil.
Method:
In a large mixing bowl mix together cottage cheese with mashed banana, eggs, raisins, and vanilla extract. Slowly add the oat flour, baking powder and mix well.
Melt coconut oil on a pan over medium heat. Using a ¼ cup measure, scoop the batter onto the pan. Cook until both sides are golden brown for about 4 minutes. Flip the pancake, and cook for an additional 2-3 minutes.
