WILD BLUEBERRIES PANCAKES

Let's start Monday with pancakes. 🥞😃
I made these pancakes with freshly picked wild blackberries, but didn't have much time to take a photo, so real food caption right here.☺

The pancakes turned out very yummy, fluffy and sweet enough.
But, the pancakes are always taste better with fresh fruits. 😋
Especially, when wild blackberries loaded with Vitamin C and K.
Just one cup of blackberries contains 30.2 milligrams of Vitamin C.
Therefore, make sure you supply your body with real fruits and real vitamins.
Ingredients:
🔸️1cup buckwheat flour
🔸️½ cup chickpeas flour
🔸️2tbsp coconut flour
🔸️1 chia egg
🔸️1cup coconut milk
🔸️1 tbsp hazelnut butter
🔸️ 2tbsp maple suryp
🔸️1tsp cinammon
🔸️1 tsp baking powder
🔸️Pinch of Himalayan salt
🔸️1 cup of wild blackberries
🔸️ Avocado/ coconut oil spray for cooking
Method:
🔸️Heat a pancake frying pan over medium-low to medium heat. Spray the pan with avocado or coconut oil.
🔸️Mix three flour, baking powder, salt and cinammon a bowl.
🔸️In a separate bowl, whisk the coconut milk, hazelnut butter and flax egg together.
🔸️Pour the wet ingredients into the dry and gently mix just until combined. Do not overmix!
🔸️Next gently stir in the wild blackberries.
🔸️Let the batter rest for 5 minutes.
🔸️Heat some avocado /coconut oil in a large pancake pan on medium heat.
🔸️Pour a scoop of the batter into the pan letting cook for 2-3 minutes or until little bubbles start to form.
🔸️Flip and cook for 1 minute on the other side.
🔸️Repeat until all the pancakes are made.
🔸️Serve your pancakes with extra fruits and coconut yogurt.
