Pumpkin Spice Pancakes

I love pancakes in general but there is something special about the pumpkin spice pancakes.🤤

Here is how I make my pumpkin spice pancakes:


𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁s:


🔸️1 ½ cups almond milk

🔸️1 cup pumpkin puree

🔸️2 eggs or 1 chia egg

🔸️2 tbsp.  almond butter

🔸️1 tsp cider vinegar

🔸️2 cups buckwheat flour

🔸️1-2 tbsp. maple syrup

🔸️1 tsp baking powder

🔸️1 tsp ground nutmeg

🔸️1 tsp ground cloves

🔸️1 tsp ground cinnamon

🔸️½ tsp ground ginger

🔸️½ tsp Himalayan salt



𝗠𝗲𝘁𝗵𝗼𝗱:



In the bowl mix together the milk, pumpkin, egg/chia egg, almond butter, maple syrup  & vinegar. Combine the flour,  baking powder, baking soda, cloves, nutmeg, cinnamon, ginger, and salt in a separate bowl. Stir into the pumpkin mixture just enough to combine.

Spray the pan with coconut oil. Cook them for 2-3mins, until golden brown.

I like to serve mine with yogurt and maple syrup.😉
