Beetroot and Raspberries Squares

If I tell you how nutritious these beetroot squares are, then you would want to bake them right away! šŸ˜‰


Beetroots are a wonderful blood purifier and blood builder, helping in the creation of red blood cells. They improve blood structure which in turn improves the health of the circulatory system, digestive system, and large intestine.

Beetroots contain betaine, a compound that works together with choline (a B-complex vitamin also found in beets), to prevent the build-up of homocysteine levels in the blood. High levels of homocysteine in the blood are associated with artery damage, heart disease, and strokes.


Beetroot can help you exercise for longer. We have these nitrates to thank again when it comes to improved exercise performance. This means that thanks to the increased oxygen circulating to our muscles, we're able to perform at a certain level for longer. One study found that the stamina-boosting properties of drinking beetroot juice could actually help you exercise for up to 16% longer.


And, beetroot can help you to lose weight. Because of their high levels of fibre, eating beets can leave you feeling fuller from eating less than other foods. And, due to the low-calorie content, this makes the food a healthy and effective addition to a weight-loss diet.


In addition, beetroots are also an excellent source of:

  • Folate

  • Manganese

  • Vitamin C

  • Vitamin A

  • Potassium

Ingredients:

šŸ”øļø150g GF jumbo oats,

šŸ”øļø50g coconut flour,

šŸ”øļø1tsp baking powder,

šŸ”øļø1tsp cinnamon,

šŸ”øļø1tbsp organic beetroot powder,

šŸ”øļø150g fresh raspberries,

šŸ”øļø100g oat milk,

šŸ”øļø1 egg or chia egg,

šŸ”øļø1 tbsp almond butter,

šŸ”øļø1 -2 tbsp maple syrup,

šŸ”øļøCoconut oil spray.


Method:

Mix all wet ingredients, including eggs/chia egg, raspberries, oat milk, and almond butter.

In another bowl mix all dry ingredients. Slowly pour wet ingredients to dry ingredients and mix well. Cook in the oven at 180C for 20-25mins.
