FROZEN BERRIES CHEESECAKE

Have you ever tried a frozen vegan cheesecake?

If you have not, then you have missed out on something special.


This cheesecake is one of our all-time favourite recipes. And, I tend to make this on special occasions too.



The cheesecake recipe won't take much of your time and I promise you everyone in your house will love it too😉.


If your kids don't like to eat fruits, then this cheesecake will introduce to them the whole new world because this cake is bursting with flavour of berries and lots of fiber and vitamins.


The cheesecake is sugar-free, so this is perfect for those who are watching their weight.


INGREDIENTS:


BASE:

🔸️1 cup quinoa flakes

🔸️1 cup of mixed nuts

🔸️1 tsp coconut oil, melted

🔸️1tsp lemon juice

🔸️9 dates

🔸️Optional: 1tbsp dried berries


FILLING:

🔸️1 cup raspberries

🔸️½ cup strawberries

🔸️100 g coconut cream

🔸️150g cashew, soaked overnight

🔸️Tiny bit of vanilla pod

🔸️1tbsp cinnamon

🔸️2tbsp fresh lemon juice



METHOD:

You will require a high-speed blender/food processor prior to starting this cake.

Blend dates together with quinoa flakes melted coconut oil and mixed nuts until fully combined. Transfer the texture to the baking tin and refrigerate for 35-40 mins for the best result.

In the meantime, prepare your dreamy filling.🤤 Placed soaked cashew nuts in your high-speed blender, add the vanilla pod, raspberries, strawberries, cinnamon, lemon juice, and coconut cream. Blend until combined. Placed the cashew mixture on top of the refrigerated base. Decorate the cake and place it in a freezer for 1 hour or so.
