Blueberry Muffins

I love baking and there is something therapeutic about it.
I feel like the process of baking can be very 'meditative'. Don't you agree?

I remember the good times I had with my grandmother trying my first hand at baking when I was three years old. I have to say I picked up a few great tips from her, which made my cooking more enjoyable.

Low in sugar, low in carbs, and full of goodness.
Ingredients:
šøļø1Ā cupĀ Coconut flour
šøļø1 tbsp. buckwheat floor
šøļø1/3Ā cupĀ maple syrup
šøļø1Ā tbsp.Ā baking powder
šøļø1/4Ā tspĀ Himalayan salt
šøļø10Ā largeĀ EggsĀ (at room temperature - this is super important!)
šøļø2/3Ā cupĀ coconut oilĀ (melted)
šøļø1Ā cupĀ unsweetened coconut milk (or other milk of your choice)
šøļø1Ā tspĀ vanilla extract
šøļø3/4Ā cupĀ Blueberries
Method:
InĀ a large bowl, stir together the coconut flour, baking powder, and sea salt.
Make a well in the center of the dry ingredients. Add the eggs, coconut milk, coconut oil, maple syrup, and vanilla, whisk together in the well, then stir into the dry ingredients until completely combined. Gently add the blueberries.
Spoon the batter evenly into the muffin cups. Bake for 20-25 minutes at 180C until an inserted toothpick comes out clean and the top is springy.
