Blueberry Muffins

I love baking and there is something therapeutic about it.
I feel like the process of baking can be very 'meditative'. Don't you agree?

I remember the good times I had with my grandmother trying my first hand at baking when I was three years old. I have to say I picked up a few great tips from her, which made my cooking more enjoyable.
I hope you are all ready for baking Sunday because I have a very yummy recipe for you here that you will love😉
Low in sugar, low in carbs, and full of goodness.
Ingredients:
🔸️1 cup Coconut flour
🔸️1 tbsp. buckwheat floor
🔸️1/3 cup maple syrup
🔸️1 tbsp. baking powder
🔸️1/4 tsp Himalayan salt
🔸️10 large Eggs (at room temperature - this is super important!)
🔸️2/3 cup coconut oil (melted)
🔸️1 cup unsweetened coconut milk (or other milk of your choice)
🔸️1 tsp vanilla extract
🔸️3/4 cup Blueberries
Method:
In a large bowl, stir together the coconut flour, baking powder, and sea salt.
Make a well in the center of the dry ingredients. Add the eggs, coconut milk, coconut oil, maple syrup, and vanilla, whisk together in the well, then stir into the dry ingredients until completely combined. Gently add the blueberries.
Spoon the batter evenly into the muffin cups. Bake for 20-25 minutes at 180C until an inserted toothpick comes out clean and the top is springy.
