HEALTHY BANANA BREAD

My healthier take on banana bread with gluten-free and dairy-free options.
Banana bread is an absolute favourite in our house, and I am always trying to invent a new recipe.
And, today I am sharing my newly-developed recipe, which you must try!
This banana bread recipe isn't just easy. It's also highly customisable and can adapt to a number of flavours and substitute ingredients. Banana bread should form a crack down the center as it bakes - a sign the baking soda is doing its job.
So, let's get baking - see my recipe below:

🔸️2 ripe banana
🔸️1 egg or 1 chia egg
🔸️1 tbsp. chia seeds
🔸️1/2 cup GF oat flour
🔸️1/2 cup coconut flour
🔸️1 tsp GF baking powder
🔸️1 cup GF oat milk
🔸️1/2 cup blueberries
🔸️2 tbsp. lemon juice
🔸️1 tbsp. maple syrup
🔸️1/2 tsp coconut oil
Method:
Mash 2 ripe bananas, then slowly add 1 beaten egg/chia egg.
Then, add milk, maple syrup, melted coconut oil, and lemon juice.
Mix all well.
Add chia seeds and blueberries, then mix wet ingredients with dry ingredients.
Mix all well, and then pour the mixture into the sprayed coconut oil baking tray.
Bake in the oven at 180C for 35-40 minutes (make sure you preheat the oven prior to baking).
